Half a carcass includes approximately: * 12-16 steaks each (t-bone, rib, sirloin, sirloin tip) * Roasts include: chuck, arm, round, rump, heal. * Other: hamburger, cube steak, stew meat, and varieties meats. * Number of steaks and roast depends on thickness of cuts and number of pounds in a package.
